Ingredientes:

  • 300 g solomillo de buey cebón.
  • 5 g sal Maldon.
  • 100 g Don Guido.
  • 200 g jugo de carne.
  • 50 g chalotas.
  • 25 g aceite de oliva virgen extra.
  • 50 g azúcar.
  • 200 g patata morada.
  • 80 g ajetes frescos.


Elaboración:

Salsa Don Guido: Pochar las chalotas hasta que estén bien doradas, agregar el Don Guido y flambear hasta que se consuma el alcohol. Dejar reducir hasta conseguir la espesura deseada. Colar y rectificar de sal y pimienta.
Mermelada de patata: lavar bien las patatas, poner en un cazo el azúcar y el agua, a partes iguales. Cuando hierva, agregar las patatas cortadas en pequeños trozos. Una vez cocidas, batidor y reservar.
Ajetes: Limpiar los ajetes y cocer al vapor durante 2 minutos. Enfriar en hielo y reservar.
Solomillo: Marcar el solomillo sobre la parrilla a fuego vivo para costrar el exterior. Hacer al gusto. Los ajetes los pondremos a la plancha cuando queden 2 minutos para terminar el solomillo.

  • 300 g trimmed tenderloin from fattened beef.
  • 5 g Maldon salt.
  • 100 g Don Guido sherry.
  • 200 g meat juices.
  • 50 g shallots.
  • 25 g extra virgin olive oil.
  • 50 g sugar.
  • 200 g purple potato.
  • 80 g fresh young garlic.

Preparation:

Don Guido sauce: Poach the shallots until they are very golden, add the Don Guido sherry and flambé until the alcohol is completely evaporated. Reduce the sauce until it reaches the desired thickness. Strain and add salt and pepper to taste.
Potato marmalade: Wash the potatoes well. Put the sugar and the same amount of water a sauce pan. When it is boiling, add the potatoes, previously cubed. When the potatoes are boiled, make the marmalade in a blender and set aside.
Young garlic: Clean the garlic and steam for two minutes. Cool on ice and set aside.
Tenderloin: Sear the tenderloin over high heat on a grill until the outside develops a crisp layer. Finish to taste. Two minutes before finishing the sirloin, add the young garlic.
